Recicember Day 4: Cheese on Toast

Some days are busy days, and this was one of them. I never said every day of Recicember was going to be amazing, did I? It was just going to be things I made!

Anyway, cheese on toast. Simple and straightforward, doesn’t even need a recipe, so I didn’t bother to look for one – instead, there’s one I made up below. However, this isn’t just boring old cheddar on bread!

Ingredients
Two slices of bread
Butter
Two slices of Gouda cheese
Some grated mozzarella

Method
Fire up the grill (that might be a broiler if you’re American, because it certainly doesn’t involve frying pans or BBQs) and hurl the bread under it. Wait for it to go a light brown.

Pull it out, flip the bread over, and butter the white side. Why? It’s delicious, and also it helps to stop the edges from burning.

Carefully place a slice of Gouda on each piece of bread, ensuring it is exactly in the centre. Measure it if necessary.

Sprinkle with some grated mozzarella, and return to the grill until the cheese starts to brown.

Interesting fact – if you wait for the Gouda to brown, you’ll be eating cheese on charcoal. Mozzarella browns much more easily, which is why it is included in this version of cheese on toast.

If you’re feeling adventurous, you can top the cheese with cooked bacon, tomatoes, and maybe a sprinkling of parsley. I didn’t, because I didn’t have time today. If you are feeling super adventurous, you can replace the bread with bacon, and use bacon instead of cheese. This will give you a plate of mostly bacon, which is not a problem at all.

TL;DR: Melt cheese on crunchy bread. Bacon makes it better.
